Vegetables have potential
Vegetables as an ingredient could help position cup cakes as a healthy breakfast to appease concerns about sugar content. In fact, about half of British consumers are interested in cakes with vegetables such as courgettes or beetroot. Almost three quarters (73%) of Italian consumers, 70% of Spanish consumers and 69% of French consumers have concerns about the sugar content of cakes.
Saving time at breakfast is crucial
Time is a precious commodity and consumers are looking for foods that are fresh, nutritious and tasty, but cost little time to prepare. There are different cup cakes on the market with different preparation times. There are powdery products that still require the addition of ingredients such as milk, egg or water; liquid dough that does not require additives or mixing; products that require a cup to put the product into the microwave; products that are sold in a microwaveable cup; or products with plastic cutlery for eating 'on the go'. The more convenient a breakfast cake solution is, the more likely it is that consumers will include it in their repertoire.
