Food-Trends 2019: Burger, Bowls and Ramen

Bowls and ramen popular, but not yet known to everyone
Almost a third of the guests surveyed from Germany, Switzerland and Austria have already visited a restaurant that offers bowls (colourfully composed dishes with trendy "super food ingredients" arranged in a bowl). The dishes are mostly so-called Buddha Bowls or Hawaiian Poke Bowls with healthy ingredients such as raw marinated fish, algae and Edamam beans. 11 percent have never been to a restaurant that serves bowls, but are planning a visit. 41 percent have not yet visited restaurants that offer these dishes. 20 percent of respondents are unfamiliar with this dish or preparation.
Half of the guests surveyed appreciate the variety and the possibility of combining everything in these trendy dishes. 25 percent think the health aspect of bowls is good. What 17 percent of the interviewees also particularly like about the colourful "bowl dishes" is their appearance. The taste convinces another 25 percent. Another 35 percent of the respondents are neutral.
The Japanese pasta dish "ramen" is also on everyone's lips. 42 percent of the survey participants have already visited restaurants that serve this dish. Quintessence: Frames are even more popular than bowls. 34 percent haven't been to a restaurant that offers ramen yet, but 7 percent are planning to go to a restaurant. Only 17 percent of the survey participants do not know the dish "Ramen".
Because many newly opened restaurants offer bowls, ramen and creative burgers, these are increasingly on the menu of restaurant guests. According to the survey, around 30 percent of respondents are eating these dishes more often.
Burger restaurants continue to be in vogue
15 percent of the surveyed guests like to eat burgers very much and therefore always visit new burgers restaurants. 43 per cent visit restaurants that specialise in burgers only once in a while and 4 per cent usually visit the same restaurant because they like it best there. 37 percent of respondents from Germany, Austria and Switzerland said burgers were less popular.
Food Trends 2019: That's what the guest thinks!
Among the guests surveyed, the topics of regionality and sustainability are still important and will continue to gain in importance in 2019. The same goes for vegetarian and vegan cuisine. In the opinion of the survey participants, serving insects in the future may occur more frequently. After all, they contain a lot of protein and important unsaturated fatty acids. They can also be produced in a more environmentally friendly way than meat. Insect-based products such as noodles and burger patties are already available. New EU legislation could make a big difference here next year. Ultimately, it is only the restaurant guest or the end consumer who decides whether demand will increase.
